The Joyful Moments Of Cooking. How Much I Love It

In my life, one of the most joyful and satisfaction I receive is when I cook, bake and enjoy my time in the kitchen with all my favourite kitchen appliances that make my cooking a lot more enjoyable and fun at the same time. I was 8 years old and I remember cooking rice for the very first time. It was the best feeling in the world when my mom taught me how to wash it and cook it. Now with my mom’s supervision she watched me as I cooked and she said, great job and it was my first time doing it. I got so excited. From then on, I started cooking a lot for my family and then as soon as I turned 14 years old, I did not need supervision anymore, and I could do everything on my own. I learned how to make lasagna, chicken soup, and other different types of food since I was 10 years old. When I turned 20 years old, I began to take over the kitchen and I would tell my mom to go relax, and I told her I got this. So now without my mom being in the kitchen, I do all sorts of dishes, I bake cakes, cupcakes, I make cookies, jello, home-made ice cream, fruit platters, salads, I marinate meats, I make meatballs, Ravioli, Armenian and Middle Eastern Dishes, I make my famous Chilli, different types of breakfast, dips, sauces, and everything, Among other delicious things that my family, and who comes over to my house, that always want seconds and even thirds sometimes. I sometimes think, I should have made extra, but I love it when there is no left overs.  I love making everything from scratch. I seldom go and buy ready-made easy stuff, I enjoy making it all on my own. The best way to make it and you know exactly what is going into your food without all the added calories and ready-made products. Sometimes you see ready-made pasta, and lasagna trays from the grocery store, I never even touch those. I make mine fresh. You never know how long those things have stayed like that. I’d rather do it myself and it is a lot more fun that way.

I remember a time when I invited my whole group of friends over for Armenian Style Ravioli Called (Mante, Manti, Mantuh, Mantee, However they spell it), and the whole extra-large pot finished amongst everyone and to this day, they want my Armenian Style Ravioli, but that day will come again when I will invite them over.  I remember a time when I cooked for over 20-25 people and all on my own. I had over 4 or 5 different dishes with salads, meats, and rice. It was a lot of fun although it was very hard to take it all on myself, but I made sure that the flavours were perfect and that everyone enjoyed it and they sure did. I love taking on big tasks on my own. Although it is great to receive help too, but I like taking on challenges and doing things on my own. especially when it comes to cooking. I don’t know, but I have become a perfectionist in the kitchen and I just love things to be cooked evenly, the sizes and I love the presentation. Even if it’s just for my family on a regular dinner night. I just love the presentation. I get the joys and satisfaction when doing so.

When I go grocery shopping, I also donate food to the less fortunate, and I put food in the food bank boxes that are put in front of grocery stores or in certain shelters, at my church they have food banks and I put a few non-perishable food items in the box. I love donating food to them. Knowing that a family out there who is less fortunate and needy is fed, that also makes me happy and that also makes me feel great that someone doesn’t have to go to bed hungry at night. It feels great to donate.

Food is my specialty and knowing that my family enjoys it and knowing that I made this with my love and care is what it important to me. I don’t cook because I have to everyday and I don’t cook for the sake of it, I actually love doing what I do and making sure my family is fed with the best possible nutrition.  Happy Cooking everyone!

What Is In A Blog? Why Do We Blog?

In this day in age, social media, blogging, and networking is booming and blooming like wildflowers, a lot of places on the internet now have blogs. There are all sorts of blogs out there, some for personal use, business, hobby, interest, travel, food, recipes, pleasure, topics of the world, issues, life, advertising, writing about a product, introducing an artist and getting yourself out there for the world to know about you and who you are and what your purpose of a blog is. Blogging is such a huge thing now in our generation, in just a few clicks and writing a username and password, your on your way to making a blog. To me, blogging is therapeutic, its where I am able to write about my feelings, write about issues, introducing others, promoting someone or something. Before even starting with WordPress, I did a lot of thinking before I started this blog site, I said what will I use it for? How will I contribute to the world with my words? Will they be read? Will they be noticed? Will my content be read by so many people? Will my blog be successful? I asked myself several questions before dotting the I’s and crossing the T’s. I am glad I made the decision to say yes and start my journey in blogging. I am glad and happy on where it has taken me. The world now is filled with bloggers like us.

I have had my ups and downs in the past year and few months into my blog, but that didn’t stop me from pursuing my dreams and making a difference in peoples lives with my words with positive approach on life, to always be optimistic, happy, and enjoy life. That is one of the main reasons why I started to blog in the first place, but then as I went on, I started to post recipes of my favourite dishes, invested time in other topics, issues, and about technology, social media, and among so many other topics that came to mind. Ladies and Gentlemen, writing is a very difficult thing to do, but it doesn’t matter when it comes to blogging, how to write, the content, structure, the topic, the title, tagging your post. I know its supposed to be done well, but it really doesn’t have to. It depends on individuality, how you want your writings done, how you want your blog website to be portrayed. It is all up to you and you have the freedom to structure it the way you want to, but always make it visible, easy on the eyes and easy to comment, follow and organize your blog, so that way you get more people to come, but then again its your blog and you are entitled to make it the way you want it to.

Blogging is something very incredible. When you search for keywords on the internet on major search engines such as Google, Yahoo, Bing, and all the other ones, There are several sites that come up and your blog is included into the list. Some people prefer either Wikipedia, or right on a persons blog. Someone Somewhere will click on your blog and engage into it and if they like what they see, they will follow it and they will become a member on your site and get e-mail subscriptions, they will comment, and bookmark it, and there are all kinds of people interested in all kinds of things. There are billions of people who are online now, and the sky is the limit. You never know how many people maybe viewing your blog, you never know from where, which is why I love WordPress Stats, it tells you by country, clicks, search engines, how many peoples visited, viewed, your blog counter, and amongst who has been following your blog and so much more. I love looking at the stats. Its incredible. Blogging is such a great tool and I love it. I encourage everyone to start a blog, and I encourage everyone to get started on how great social media and networking can be. To advertise your business, and to promote yourself, a blog does wonders. You never know who is looking at you. Some people go places and get far in life just by blogging.

I remember a few weeks ago I went to a party and a friend of mine approached me and said, someone I know writes movie critics on his blog, and someone from an agency or a critic from a big movie company noticed and he was offered a career path in New York City in New York and now he is living there and making a lot of money, by just blogging. He was noticed from online and now, hes living very comfortably and hes doing so well. I am telling you, blogging is a very powerful thing now. Anybody can see what you write and if you get lucky someone big sees it, you have it made. All the best to you and your blogging journey. I know its hard, but you will get there someday, I know that for sure. Enjoy blogging, and enjoy what you do. All the best!

Had A Great Birthday Yesterday – Thank You For The Wishes

for 28 years now on April 30th, I celebrate my birthday. I am so happy and glad for all my birthdays and I am ever so grateful to God for giving me this life and I thank my parents for bringing me into this world and to experience everything I have experienced in my life, with traveling to many places, for giving me everything, a roof over my head, a nice warm bed to sleep in, food to eat and so much more. I am so thankful for everything as I look around the world and people do not even have running water to drink and bathe from. I am so fortunate and I have learned not to take anything from granted in my life.

There were times where some of my birthdays did not go as well as I had hoped for. Once in high school when I turned 16 years old, I had invited about 30 people to come over to my house for my sweet 16 birthday party and it was one of the most embarrassing yet humiliating things in my life where only one person showed up out of all the others. I was thinking they were my friends and everything but they really weren’t. I was devastated that I could not have a sweet 16 party, and also I never knew what it felt like to have a surprise birthday party or even had a big party to celebrate me and my day. I never knew what that feeling was like. I didn’t even know the feeling of when I turned 20, 21 years old where I would have a great party, but I did go to Montreal for my birthdays quite a lot in my early 20′s and to get away from things and to enjoy a dance club here and there with my friends in Montreal. The only parties I have ever had was when I was a kid where a lot of my family came over to celebrate and that is about it. To me The gifts weren’t important, but being with my family and couple of friends is what I want.

I know parties should not matter and everything, but in my case it does. In my early adult life and as an adult now, I want to be able to know what it feels like to have a party. I know that I can create my own party and have people over and stuff and go out but I just get those bad memories again when I was 16 years old. I really never had a lot of friends to begin with and I invited all those people and never showed up except for one. I was crushed and cried for days. I just want to know what it feels like to have a party and its all about me and having people around me that has come to celebrate me. I am hoping that will happen soon. I sometimes feel so isolated and they are feelings that I never want to get back. Nowadays everything is great. My beautiful friends took me out for my birthday over the weekend and surprised me with a cake which was so sweet of them. I will never forget that.

What have you experienced in the past about your birthday? Did you have a birthday that was a blast or not such a blast?

Anyways, I would like to take this opportunity to thank my family, friends and fans for all the birthday wishes, the phone calls, text messages, e-mails, facebook messages, the birthday cards, the birthday e-greetings, virtual cakes, flowers and everything. I really appreciate it so much from the bottom of my heart. I love you all!

Grocery Shopping – A Cool Story

The other day, I had gone Grocery Shopping in the meat produce section of the store and all of a sudden I was just talking to myself on cooking and finding new ways to cook chicken with different spices and herbs and sauces, and all of a sudden there were about 3 or 4 people who are women around me wondering what I was saying and they heard me talk to myself, then they started asking me questions, what do you do to cook chicken? What spices do you use? I said I use different spices and mix them together, then make my own sauce with the ingredients I buy. I said I usually cook chicken with a sweet and sour twist to it, and I make sure that I bathe my chicken in a lot of sauce, marinate it and all that. They said oh wow, that is great. They told me you must be an expert cook and you must do all the cooking in the house. I said, yes I do. I love to cook for my family and I enjoy creating new types of recipes and experimenting with flavours, spices, sauces, herbs, and more. We became instant friends and we took each others contact information and now we are in touch and share with each other our recipes, and soon we will be getting together for coffee to discuss our food preparations and more.

It is so amazing how people cross your path and especially from a grocery store, so Thank goodness I was talking to myself. I thought it was strange talking to myself while grocery shopping, but it was really cool to get my thoughts rolling and enjoying my time shopping. I love grocery shopping and I always look at prices and sales from the flyer.  They are very nice ladies and 2 of them were together shopping, the other one was just alone shopping, and we ended up having a 15-20 minute conversation by the meats about food, and everything. They love watching the food channel and they are avid cookers and love baking too. I am so happy to have found them as we share the same interests. You meet people where you least expect it, and its an ideal place to meet in a grocery store. A lot of people have asked me questions at the grocery store, but this one struck out the most. I wasn’t going to go shopping that day, but then I ended up doing so anyway, so I was glad I did.

So excited to get together with them. probably this coming week. lets see. Has it ever happened to you where you meet people in a grocery store or where you least expect it? Did you make friends with them? Do you enjoy meeting new people all the time? I was really happy with meeting them.

Talin’s Special Pomegranate Vegetable Salad

Pomegranates are one of my favourite fruits to eat and pomegranates can be used in so many ways as juices, a snack, salads and so much more. Pomegranates Originated from Armenia. Even though the Apricot is Armenia’s National fruit, but Pomegranates are equivalent to that. Pomegranates have so much nutrients and health benefits. You can get them at your local grocery store or specialty grocery stores. They are lovely fruits and I like them a lot. Well, here is how you make Talin’s Pomegranate Vegetable Salad.

You will need:

- 1 Red Onion – Chopped into Salad Size…

- 1 or 2 Romaine Lettuce – the full thing —- depends on how many people will be having salad.. Wash the romaine lettuce

- 2-3 Pomegranates — take the red seeds out — first before doing so, wash the pomegranate from the outside….

- Washed 1 Green Pepper — chop into salad size pieces.

- Half of a Cucumber or a whole one — Washed and chopped  into salad size pieces.

- 1 or 2 tomato’s on a vine — washed and chopped into salad sized pieces.

- 2 or 3 Celery Sticks WASHED. Chopped into elbow macaroni like pieces but slightly bigger…..

- 2 Lemons washed skin — Squeezed  ————— Mix this with the 2 ingredients below:

- 2 tablespoons of Olive Oil

- 2-3 sprinkles of SEA SALT

—- Optional — You can put Feta Cheese, A little Cracked black pepper, Black Olives…

*****Remember to wash all your ingredients very well and discard the ends.******

To Prepare:

Just incorporate all the salad ingredients into a big salad bowl, then add the pomegranate seeds on top then the Lemon Olive Oil juice, then toss and mix the salad very well until all the ingredients incorporate with each other and there you have it. A HEALTHY SALAD.

Enjoy!!!!

In My Family we get together for dinner, then we have egg cracking contests, distribute Chocolate, and then we usually pray and Thank the Lord for all that he has done for us.

Remember, it is not just about the Chocolates, Bunny Rabbits, Eggs, and the Pretty colours of Easter, it is about our Jesus Christ who sacrificed his life for us all and his love for us and he was crucified on the Cross. Today, Jesus Rose, and he is watching for all of us, but Easter may mean different things to different people and that is all okay too. What are you most Thankful for when it comes to Easter time? Being with Family and Friends is the most important and coming together during days like this is something great. It should always be that way right?

Talin’s Spinach, Mushroom, Red Onion, Whole Wheat Spaghetti in Mushroom Sauce

I have not written a recipe in a while, so I decided that today is all about a healthy recipe. My new years 2012 resolution is to get more healthy, eat well, have regular physical activity and have a well-balanced diet. Eat everything of the food groups, but everything has its limits. Now today, I’d like to start with Spinach, Mushroom, Red Onion Whole Wheat Spaghetti with Mushroom Sauce.

Ingredients needed:

Basil,

Oregano,

Salt (Mushroom Sauce will have Salt in it, but just add a little bit more into it)

10-15 Mushrooms(Regular and cutting them until each mushroom becomes 4 Pieces),

2 Red Onions Chopped,

Fresh Bagged Spinach — One or Two Bags

Whole Wheat Pasta — 750 g or 900 g —– Serves 3-5 people.

Mushroom Soup Sauce — 1-2 cans

Olive Oil

To Prepare the Sauce: Remember to wash the spinach, then wash the mushrooms and the onion before chopping.

you put olive oil into the Spaghetti Sauce Pan — make sure its deep enough to then put the whole wheat spaghetti to mix together….

Put in the chopped red onions to cook, but do not overcook the red onions as it will lose its colour…. cook on medium heat.

then quickly put in the mushrooms after the onions cook just a bit

then put in the basil, a dash of salt and Oregano into the pan and start mixing….

then after without chopping the spinach, just put it all into the pan and it will shrink in size. you do not need to cut the spinach.

then your done….. make sure the onions are still red to make it look good and the nutrients from the onions will not go away….

Then you will put in the Mushroom sauce and let it all cook until warm to hot….

To Prepare the Whole Wheat Spaghetti

In a pasta pot put water, but just enough and keep an eye on it so it wont overflow when it boils… add salt and olive oil into the water.

after the water has completely boiled put in the whole wheat spaghetti and let it cook for 10 minutes to 12 minutes MAXIMUM until its al dente. don’t overcook spaghetti or any type of pastas.

Remember to mix the pasta in the water instantly after putting it in and keep mixing the whole wheat spaghetti so it wont stick together every 3 minutes until its cooked

————————————————

Then you drain the water from the spaghetti and you mix in the spaghetti with the sauce and your done…

—— Eat Immediately. You can put Parmesan cheese on top or feta cheese, but make sure the feta cheese is not so salty… there are different types of feta you can buy from a specialty grocery store or a cheese factory or something.

Then your done!

BON APETIT!

Introducing You An Award Winning Talented Chef – Suman Roy

I would like to introduce you to an award winning and talented chef named Suman Roy. Chef Suman and I met after I joined the WordPress community, where we crossed paths and became friends. Over the years Chef Suman Roy has been on various television programs, news articles and culinary magazines. Here is a biography and introducing you his life: also can be viewed on http://chefsuman.ca

The Early Years.

From his early days, Chef learned the most valuable lesson from George Bernard Shaw: “There is no love sincerer than the love of food.” Though this got him occasionally in a lot of trouble. Chef recalls his early days, when his father would attend the local market every morning, to get the freshest seafood and vegetables. With a few culinary steps, and the addition of a few fresh herbs and spices, these were transformed into a delicious piece of culinary art.  “Chef Suman” as he is popularly known by his apprentices and peers, learned the importance of local, sustainable, healthy cooking from his childhood days from his mother, a very renowned Chef in India.

The Apprentice.

He has apprenticed under the able guidance of many of the World’s most renowned Chefs, in Michelin Star Restaurants, The Leading Hotels of the World, and the World’s finest Kitchens.

The Professional Chef.

During his more than 15 years as a renowned and creative Culinarian, Chef has traveled across the globe with culinary careers across the breadth of four continents.  All of this, and a commitment to his profession has led Chef to his current career as Corporate Executive Chef for Campbell’s Soups, a world leader in their class. was also a Chef of the Athlete’s Village for the Vancouver 2010 Olympics serving up his delicious, healthy and culturally sensitive culinary styles to some 2,600 athletes from 82 nations participating in the games. Chef Suman was nicknamed “Gourmet Alchemist” during his tenure as a Chef on the US Presidential Yacht. Chef is often finds himself confronted with this question; “What makes you different from your colleagues?” he replies Flavours… Flavours… Flavours… “It’s knowing how to marry the rich and varied International Flavours, this is an art, not a trade.”  As an avid Locavore, Chef has become as master at working with local sustainable ingredients, fusing International flavours and creating masterpieces.

The Teacher.

Chef Suman teaches Culinary Art at Centennial College in Toronto.

The Award Winner and Author.

Since 2006 Chef has been trying to find the answer to the question; “What is Canadian Cuisine.”  To his surprise, there has not been a consensus.  So,  he decided to travel around the country trying to define what he calls OUR CANADIAN CUISINE.  After almost 3 years of extensive research, came Chef’s award winning book, “From Pemmican To Poutine – A Journey Through Canada’s Culinary History,” which rightfully summarizes his philosophy: “Using fresh, local and in-season ingredients is the basis of much of my cooking.”  This Literary creation scored Chef two International Recognitions – The Gourmand World Cookbook Award in Paris, France in 2010, and the Cordon D’Or Culinary Academy Award in Florida, United States in 2011. Chef was also recognized by the Premier of Ontario for this magnificent creation. In 2007, Chef was awarded “Hero of Everyday Life” and “CEO’s Marketplace Excellence Award” by Sodexo, and “President’s Award” by The Escoffier Society of Toronto in recognition of his contribution to the Community. In 2008, Chef Suman was invited to be the first Chef member to sit in Toronto Food Policy Council, in recognition of his knowledge and passion towards a Greener Culinary journey. In the same year, Chef became the first Canadian Chef to be invited to visit Singapore by IE Singapore to explore the Singaporean Cuisine.  During this part of Chef’s journey, he brought back many authentic Singaporean flavours to the daily life of Canadians. Chef also visited China, the same year as an ambassador of Canadian Cuisine.

What is Your Coffee Taste? Starbucks, McDonald’s, Tim Horton’s or Other

In the past few years there has been a debate going on with what coffee taste people go for and what they think is a better choice to drink coffee. I am sure those who drink coffee or other beverages at these places such as Starbucks, McDonald’s, Tim Horton’s know what I am talking about when it comes to taste and when it comes to good quality coffee. Someone from the states spent so much money for a cup of coffee from Starbucks, adding so many shots of espresso and so many flavours put into it. I don’t know about you, buck I wouldn’t spend so much money on a cup of coffee. I’d rather go to McDonald’s where you spend way less and you get free refills too. Starbucks is often pricey, and the coffee’s in my opinion are not that spectacular in my opinion. In the end it is all about a person’s preference right? I am not trying to put Starbucks down or anything, but it depends on a persons taste. It takes an acquired taste to differentiate right?

Tim Horton’s coffee and other hot beverages were my favourite, but the cups are not well insulated and I end up burning my hand holding it, McDonald’s cups however have well insulation and the cover cap is also great quality too and you get more at McDonald’s then you do at Tim Horton’s, plus way less and sometimes McDonald’s offers promotions of Free Coffee or Latte’s the small size but then again it is free refill only on the coffee’s though and it tastes so much better then the other ones. Now I don’t know what taste you have when it comes to coffee. I am sure a lot of people have Tassimo, Keurig, and some sort of specialty coffee maker at home.

Now for me, McDonald’s coffee has this incredible and great taste to it and I have never been disappointed with my coffee. At Tim Horton’s sometimes it comes out to be too strong, sometimes just right, sometimes not that great tasting, and they don’t even mix the ingredients properly in the coffee or other flavoured coffees that they make like the French Vanilla, White Hot Chocolate, Cafe Mocha’s, and other beverages, sometimes they get it right, and a lot of times they don’t get it right. I have never had problems with McDonald’s coffee. I don’t know what you like and what your taste is for certain brands of coffee. Do you like making your own coffee at home or do you like to grab a quick coffee from your local coffee shop? Each Coffee shop is different and they all have something good for everybody, but it all comes down to your taste and your preference. Tim Horton’s has this Roll up the rim to win deal where you win a Toyota Rav 4, Barbecue, Food and beverage prizes and other things, but you have a 1 in 6 chances to win, and a lot of them say please play again or all you win is a coffee or donut. It is not fair. Each one should be a winner.

Are there any other coffee shops or cafes around you that you like their coffee? If so, what do you think of it? What is your taste? What is your opinion on a great cup of coffee or other hot beverages served by your favourite brands? It can be a brand where you take home and make it yourself. Not necessarily a coffee shop or cafe. It is all to your liking and your opinion. I’d like to hear from you.

Enjoy your coffee! :)

Some of us making blogging part of our lives everyday, some blog daily, some blog bi-weekly, some blog, weekly, a few times and make it a part of life. Some people commit their lives as for some it is a career path they choose to take with journalism, writing, and blogging for perspective newspaper, television news companies. Some like it as a hobby or interest everyday or when they get a chance to write.

Now, How committed are you to blogging? Do you blog daily? Do you blog a couple or few times a week? Or a few times a month? On average how much do you spend time on blogging? Is blogging a part of your life or is it something that you do on your leisure time? Do you take time to blog even when life is so incredibly busy and fast paced? For me blogging is a commitment, but I do not let it take over my life. I don’t spend too long on my blog per day. Maybe about 1-2 hours a day to perfect, and to come up with different topics a day, then I start to write. It is very therapeutic for me. I love blogging and it gives me time to share my ideas, interests, and introduce myself, about merely everything that comes to my mind on that certain day, following the latest news in the world, and everyday, I take a list and I come up with the best topic to write about, and then sometimes when I do not have anything to write, I just post up a recipe of mine and I do not like to keep any of my blogging days blank such as when I go away on vacation for a week or when I am not able to get online, I do my blogs before hand and I work on them as much as I am able to and schedule my blogs for days when I am not able to blog.

I never like to miss a day in my blogging. When I know I won’t have time to get on my blog, I always make sure that day is filled with something. I love it very much. I am committed to it and its something that I like to give back to my fans, readers, supporters, family and friends from all over the place. Thank you so much for always giving me a boost and I wish everybody all the best with everything. My blog couldn’t have been possible without you all and I thank you all and appreciate it very much. Much love goes out to all of you.

I Am In Love With My KitchenAid Stand Mixer

Since I got my KitchenAid Stand Mixer life has gotten so much simpler with cooking and baking different types of food, and My hands don’t get tired anymore with mixing with a whisk and a hand held food mixer. Now my kitchenaid stand mixer does all the work and it is so beautiful. I have a flashy white one and its an ultra power plus one. Very good quality. Well, even if its an Artisan, Classic, Professional, all of them do a great job in mixing the batter or mixture well. I make all sorts of things into it. I love the wire whip, kneading dough, and all the accessories. my next purchase is going to be the pasta maker accessory and the other ones. Anything else in the kitchen doesn’t quite add up to the kitchenaid stand mixer. Can’t believe all the colours it comes with now. I have seen it at the stores and there is Pink, Orange, Copper Orange, Black, Red, Purple, Tangerine Orange, White, and you can even customize your own kitchen aid stand mixer if you special order it, but why do that when you can buy it at the store instantly right? LOL.. But it all depends on what your preference is, but I love my baby and it is so beautiful. Each household, should have one of these. It is a great tool in the kitchen. If you have one, I am sure you can relate to me and the passion you have for it. I even kiss mine after I use it for good luck for the next time I use it. I love it so much. These kitchenaid mixers are not cheap either. They happen to be a lot of money if they are not on sale. Some are over 500 bucks, some are over 700 bucks, but if you get it on sale its like 250, 300 bucks, but then again they do run expensive because of the high quality and the way it is made. So I can for sure relate as to why it is expensive. This baby is gorgeous. I will be using it today to make my cake. :) I have a lot of things to do today. I will be cooking and baking this week so it will be ready for Christmas. I can’t wait to use it today. I use this baby at least 3 times a week. If you need tips and tricks on how to work it and what speed, just let me know. Depends on what you make.

This would be a great purchase or a gift to your loved ones or someone very special who loves cooking in your family. They would love it. :)

Enjoy and have a great Christmas and Happy New Year almost.

:)

Printed from THEGUTSYGOURMET.NET

INGREDIENTS: Makes 10-12

Dough:**See Note

• 1 teaspoon active dry yeast

• ½ tsp sugar

• ½ cup lukewarm water

• 3 cups all purpose white flour

• ½ tsp salt

• 1 tablespoon olive oil

** NOTE: You can use medium sized fluffy flour tortillas and skip the dough making. Be sure when

you bake the lahmajoon/lahmacun, that you oil the baking sheet when you bake them.

Topping:

• olive oil for the brushing the dough before the topping

• 1 tablespoon butter

• 2 cloves crushed garlic

• 1 large onion, grated

• 1 tomato skinned and chopped – put tomato in a deep bowl and cover with boiling water for 2

minutes, remove and peel. Leave seeds and juice with the tomato, do not discard.

• salt to taste

• 1 – 2 teaspoons sugar

• 12-16 oz ground lamb – can use 85% fat ground beef.

• 2 tablespoons tomato paste

• 1 tsp red pepper flakes

• 1 large lemon, juice of

• 1 green bell pepper, finely diced

• 1 pickled Jalapeno pepper finely chopped

• 1 cup flat leaf parsley, finely chopped

• 1 cup fresh spearmint, finely chopped

• 1 tsp. cumin

• 1 tsp. paprika

MAKING THE DOUGH:

** NOTE: You can use medium sized fluffy flour tortillas and skip the doughmaking. Be sure when you bake the lahmajoon/lahmacun,

that you oil the baking sheet when you bake them.

In a small bowl mix yeast and the sugar. Add 1/2 cup of warm water, stir well, cover the bowl. Keep the mixture in a warm place

for about 15 minutes to full activate the yeast.

Add the yeast mixture to the remaining flour and water. Knead well until the dough is soft and smooth.

Place the dough in a large oiled bowl, cover and let sit in a warm area of your kitchen for 1 hour or until the dough has doubled

in size.

Take the dough out and punch down. Divide the dough into 10-12 balls just slightly smaller than a tennis ball. Roll and set aside

on a floured surface and cover with a damp towel. Set the oven at 450º F.

MAKING THE TOPPING:

Add the onion, garlic and butter to a skillet and sautè until translucent. Take off the stove and let cool.

Take all your prepared vegetables and place them all in a large bowl. If you have a food processor, this would be the time to

give all the vegetables a few pulses to get them all into a fine spreadable size. DO NOT PROCESS TO AN UNIDENTIFIABLE MUSH!

Add pepper flakes, salt, sugar, paprika, cumin and lemon juice into a large bowl with the other ingredients and mix well by hand

until you have well mixed, spreadable topping.

Take balls of dough and roll into a round, circle or an oval measuring up to 1/16 to 1/8 inches in thickness. Place on a baking

sheet that has been oiled with olive oil, canola oil or cooking spray. Brush each round with olive oil (Extra Virgin is best). Top

with 2-3 tablespoons of the topping and spread the topping very thinly. Make sure you have an even layer.

Each baking sheet will hold two lahmajoon/lahmacun. You should have 3 or 4 baking sheets to keep things moving. Keep your

eye on the sheets in the oven to make sure they bake evenly. You may have to move things around the oven. The oven should

remain at 450°F – not too high and not too low. Since you are going to be constantly opening the oven, the temperature ideally

will stay between 400º F and 350ºF. Cooked Lahmajoon/Lahmacuns are crispy at the edges and pliable in the center. You can

stack your finished lahmajoon/lahmacun topping side to topping side and bottom to bottom. Cover them with a damp towel to

keep them from getting too brittle.

You are now ready to fill them with fresh parsley, cucumber slices, sweet onion slices or other fresh veggies and a drizzle of

lemon juice and extra virgin olive oil, roll them up and enjoy these Anatolian delights.
